Have you recently opened a demonstration kitchen or upgraded your existing one? If so, what facilities do you now have available?
Our 2,500 sq ft development kitchen opened in 2006 and is regularly upgraded to include the latest equipment and technologies available to the foodservice market. What kind of equipment details can you impart to dealers by using a demonstration facility that would be difficult to explain otherwise?
The most important part of having a demonstration facility is the ability to see the quality of the product on offer and also the results that it can produce! Some equipment, particularly in the 
accelerated cooking or combination steamer market, rely on the quality of the end cooking result. These items can also sometimes seem expensive until the item is fully demonstrated and the 
full benefits seen.

How do your demonstration facilities help dealers themselves and help them sell to end users?
Our development kitchen provides facilities that dealers would not necessarily have access to at their own premises – and as a wholesaler we are able to provide a wide range of equipment and brands that a manufacturer cannot always do. We are also able to provide the crucial link between dealers, end users and food companies. We regularly arrange trials and testing via our Food Solutions team, giving the end user the confidence that they have the right product for their needs, particularly important for larger group customers and those who require complete product consistency.

Do you organise regular training events at your demonstration kitchen – if so, what form do they take?
Our development kitchen has hosted many industry training events, both scheduled events held by manufacturers and bespoke events organised at the request of our customers. 
We have also played host to many industry meetings and seminars, as well as offering a perfect opportunity for chefs to test and trial equipment.

What are the latest developments in microwaves in restaurants?

Manufacturers are always looking for new and innovative ways that microwave technology can be used. What food and drink can best be made using microwaves?

Today’s microwave ovens are sophisticated, yet easy to use and produce excellent cooking results in a fraction of the time it takes to cook foods conventionally and their versatility is under estimated. Many foods and dishes can be cooked very, very well in a microwave oven: cakes, sauces, meat, fish, vegetables, fruit, pasta, rice, eggs and jams can all be cooked with great results. There are a great diversity of dishes that can be prepared quickly and easily from fresh ingredients. Not only that, but more nutrients are retained in microwave cooked food than by any other cooking method. In fact, correctly cooked vegetables contain 85% of their original vitamin content, when boiled they often
contain none! A great benefit especially for growing children where they would only need to eat a little to get more of the vitamins they need. Be prepared for a bit of trial and error! Overcooking is one of the common problems experienced when new to microwave cooking or introducing new dishes. It is better to undercook first until you are familiar with a recipe, test it and then increase the cooking time. You should also factor in standing time and test a dish after this – a bit of trial and error will help establish the correct timing for a perfect result. You can always put it back in the oven for an extra minute – whereas overheated or overcooked food is ruined. Consider each of the foods you are cooking – every food has a different moisture, fat and sugar content and different starting temperatures – e.g. refrigerated, ambient etc. and these factors all affect cooking times and can affect the final result.



Are restaurant chefs using microwaves to the best of their ability?
Understanding is still the key to success with microwave cooking and if caterers do not fully understand what their equipment is capable of, they are unlikely to be using it to its full potential. By fully understanding their microwave and getting the right techniques for each type of food, caterers can achieve succulent meat, poultry and fish together with perfectly cooked vegetables that retain taste, texture and nutritive value. Many of the techniques used in microwave cooking are the same as used in conventional cooking, but with a few minor adjustments. Historically there has been a lot of negativity towards cooking with microwaves, but there shouldn’t be, microwaves can cook great food in a fraction of the time it would take with other methods. Not only do they save time, but money and nutrients too. Overcooking is one of the common problems experienced when new to microwave cooking or introducing new dishes. It is better to undercook first until you are familiar with a recipe, test it and then increase the cooking time. You should also factor in standing time and test a dish after this – a bit of trial and error will help establish a perfect result. If unsure, always start with a recipe you are familiar with – if you have cooked it before you will know exactly what the finished dish should look and taste like, so you can then compare and tweak the cooking procedure to get the same result.

BBQ Ben 2019: A BBQ Calendar

Every year there are food and food-related events in the UK and around the world. If you have a catering business these events can be a great way to drum up business. If BBQ is part of your catering business, then I invite you to get creative and have some fun with these events and special days

National BBQ Week

Starting with the best BBQ event of the year, and in its 23rd year, National BBQ Week runs from 27th May to 2nd June 2019. For catering or food-related business this is the absolute excuse to BBQ your food, make some noise about yourself and really have some fun. Currently, things are just warming up and that means you have time to think and plan. This is the ultimate national event for the BBQ industry in the UK. Make sure you are part of it!


Veganuary
For any catering business, keeping up with food trends and trying something different is vital. Veganism is growing worldwide and even a BBQ can be vegan in design. January 2019 will be the fifth year that Veganuary is part of the food calendar. This is an opportunity to bring some vegan recipes and dishes onto your menu, and yes there are some amazing Vegan BBQ ideas. So, push out some vegan food ideas around in January and kick the year off well.

Fairtrade Fortnight
How conscious are you about where your food is grown and farmed?  Fairtrade Fortnight from 25th February to 10th March is a great way to raise awareness about food and support the farmers and workers in developing countries who produce some of our most common and popular foods. What an amazing way to create some superb food, support farmers in developing countries and raise awareness of Fairtrade. You can be part of the fun by visiting the Fairtrade website

Great British Beef Week
Beautiful British beef steaks on a BBQ are extremely tasty and as a catering business, you can celebrate everything beef around St George’s Day on 23rd April. British beef is in the spotlight during this week and thus there is no excuse not to serve up some sizzle on your BBQ or just make some amazing beef pies.  Keep an eye out for more details about this annual event on the Ladies in Beef website

National Burger Day
Perhaps the most popular BBQ food anywhere in the world, the burger patty is celebrated every August in the UK. National Burger Day (UK) 2019 will take place on 22nd August. This really is a great way to have some fun with your food business and do something special for your customers with some burgers. Show off your BBQ and culinary skills and show people that burgers can be amazing.

Seafood Week
October will once again see Seafood week become part of the food industry calendar. This import culinary week is one where anyone in the food or catering industry can get involved and promote the UK fisheries and the fish they bring to our plates. The event is often very hands-on and anyone in the catering industry is invited to take part. Fish is such and important part of a healthy diet and this week encourages people to explore fish and is a prime opportunity to add some fish to any menu.
There are many culinary events that take place across the UK and around the world, these are just a handful, and they may help you with some ideas for a hugely successful 2019.

Microwaves & Light Equipment Care Home Catering – Winter 2018

What features on the latest generation of microwave ovens are going to be the most important/of greatest value in the Care Home kitchen?

When looking to invest in new microwaves, Care Home Caterers should look at models with variable power, as this will allow more dense food products to be reheated/cooked at slower speeds, allowing for the conduction of heat to work through to the middle to avoid an overcooked outside and raw centre! The use of variable power works in the same way as your hob and gives you the exact control you need to create speed yet a quality cooked/reheat result. A further feature to look for is stage cooking. This allows an operator to program a series of different defrost, cook or reheat tasks, allowing a complete process to be carried out at the press of a button. For example, it is possible to defrost, then cook and keep warm ready for serve up all in one go. Most leading brand models now have this function as standard. In addition, energy efficiency is a top requirement for many users and is fast becoming a definite key feature. Machines that can produce optimum results whilst keeping energy usage low will meet the needs of many new or refurbished kitchens. There will always be a place in every kitchen for a basic microwave, but future developments are likely to focus on automation, particularly for multi-sited operations. Menu consistency is key and machines which offer easy menu programming will become more and more appealing. How should the Care Home Caterer select the right microwave?
To choose the right kind of microwave, consumers should look at their menu offering and decide what tasks the microwave oven should undertake. If the microwave is to be used mainly for simple reheating and defrosting of foods then a straight-forward commercial microwave will suffice. However, if you wish to reheat and cook food products then a combination microwave oven is well advised. You need to select an oven with sufficient power, but just as importantly, do not over specify. If too low, frustrations can be caused by delays, and if too high, it will be difficult for the user to judge the timing of small portions. Whilst it is common for caterers to choose speed (the higher the output the faster reheat times), it is also very important to understand that for some food products too much speed will destroy smaller portions of food or the delicate and sugary types of products. Many cheaper imports are flooding into the UK and it can be tempting to go down this route, but unknowingly to many, a lot of this equipment doesn’t have any product conformity standards and the back-up of a full warranty. What are the other items of light equipment that no Care Home kitchen should be without, and what should the Care Caterer consider when investing in new items of equipment such as blenders, mixers, food processors, panini grills etc?
In addition to a microwave, many sites will need a solution for stove top cooking such as frying, poaching or boiling. Induction technology combines cooking speed with safety and energy efficiency. What would you say to a care home caterer who is in the habit of specifying domestic light equipment?
First and foremost, microwave wattage or output is a huge differential. Domestic microwaves will typically range from 800W to 1000W, with most models on today’s market being 900W. A commercial machine will normally start from 1000W, ranging all the way up to 1900W or further. This means much faster cooking and better results! Another big difference between commercial and domestic machines is build quality. A commercial machine should use on the best, heavy duty components – designed to withstand the intense use of a commercial environment. Domestic machines are built with light, home use only in mind – and therefore use much lighter duty components. Finally, consider the warranty provided with the machine. A domestic machine is designed for use in the home, so any use outside of this will invalidate any warranty it is sold with. Commercial microwaves should come with at least 1 year on site warranty cover, with many of the leading brands providing up to 3 years on site. Always consider the warranty offered on the magnetron – which is the heart of any microwave!

Baking Bread on a Crown Verity BBQ


There is nothing better smelling or tasting than freshly baked bread. However, something even tastier is bread baked on a Crown Verity BBQ. There are a handful of breads that can be cooked on your barbecue and most of them are simple to make, and don’t let the simplicity fool you BBQ breads are amazing.

Flat Breads on a BBQ
These simple and delicious breads are amazing. They can be plain with no spices or herbs and when eaten hot of the grid with a dollop of butter just send the taste buds into overdrive. And then they can have herbs and spices such as rosemary to give them a truly magical taste.
The recipes for almost every flat bread for a BBQ are very much the same. You will need some plain flour, some dried yeast, olive oil (not essential but recommended) and some water.  Rather than making one large “loaf” flat breads are far better made as rolls or single serving sized breads.
With flat breads, the ingredients are mixed, kneaded a little and left to rise for a few minutes before being placed on a tray on the BBQ. Remember, the bottom of your bread will cook faster than the top and having the correct temperature is part of the art of flat bread making on a BBQ. You might have to experiment a little at first, and one of two of your loaves or rolls may get burnt until you perfect the art. Once perfected, the simplicity of making flat bread on your barbecue will make them a must-have, and no BBQ will be complete without them.

You can of course, play around with different types of flour to get different types of flat bread with amazing tastes. The flat breads do not rise a great deal but when made well are delicately soft and the homemade taste shines through. Some people brush olive oil on their bread while it is baking and top this off with a scrunch of salt. You can experiment further and add cheese into your bread mix or even chopped bacon, to be honest, the sky is the limit with flat breads.

Beer Bread or No-Knead bread
Beer Bread or No-Need breads on the BBQ are often called pot breads. These breads are even easier to make that the flat breads but often need a little more time to cook. To really cheat and produce something amazing self-raising flour is the secret. A bag of self-raising flour mixed with a bottle of beer and maybe a little water with salt to taste is by far the easiest bread you will ever make. Once the ingredients are mixed they are placed in a cast iron pot layered with baking paper and left to bake slowly on the grill or near the heat of the grill, the trick again is to get the temperature right and stop the bottom from burning.

Around the world beer or pot breads become “modified” some people throw in a can of sweetcorn and mix it in to create a simple corn bread tasting loaf. In South Africa, one of the most unusual is a Chakalaka Beer Bread that doesn’t even need the beer where a can of hot and spicy mixed vegetables are stirred into the mix producing a bright orange bread with a sweet, spicy taste that people go crazy for. Adding in cheese is common with simple pot breads as is adding bacon or chopped veg.
Best served hot, any bread cooked on the Crown Verity BBQ is a simple and tasty addition to any BBQ and will turn any humble Chef into a true BBQ master.
