BBQ Ben 2019: A BBQ Calendar

Every year there are food and food-related events in the UK and around the world. If you have a catering business these events can be a great way to drum up business. If BBQ is part of your catering business, then I invite you to get creative and have some fun with these events and special days

National BBQ Week

Starting with the best BBQ event of the year, and in its 23rd year, National BBQ Week runs from 27th May to 2nd June 2019. For catering or food-related business this is the absolute excuse to BBQ your food, make some noise about yourself and really have some fun. Currently, things are just warming up and that means you have time to think and plan. This is the ultimate national event for the BBQ industry in the UK. Make sure you are part of it!


Veganuary
For any catering business, keeping up with food trends and trying something different is vital. Veganism is growing worldwide and even a BBQ can be vegan in design. January 2019 will be the fifth year that Veganuary is part of the food calendar. This is an opportunity to bring some vegan recipes and dishes onto your menu, and yes there are some amazing Vegan BBQ ideas. So, push out some vegan food ideas around in January and kick the year off well.

Fairtrade Fortnight
How conscious are you about where your food is grown and farmed?  Fairtrade Fortnight from 25th February to 10th March is a great way to raise awareness about food and support the farmers and workers in developing countries who produce some of our most common and popular foods. What an amazing way to create some superb food, support farmers in developing countries and raise awareness of Fairtrade. You can be part of the fun by visiting the Fairtrade website

Great British Beef Week
Beautiful British beef steaks on a BBQ are extremely tasty and as a catering business, you can celebrate everything beef around St George’s Day on 23rd April. British beef is in the spotlight during this week and thus there is no excuse not to serve up some sizzle on your BBQ or just make some amazing beef pies.  Keep an eye out for more details about this annual event on the Ladies in Beef website

National Burger Day
Perhaps the most popular BBQ food anywhere in the world, the burger patty is celebrated every August in the UK. National Burger Day (UK) 2019 will take place on 22nd August. This really is a great way to have some fun with your food business and do something special for your customers with some burgers. Show off your BBQ and culinary skills and show people that burgers can be amazing.

Seafood Week
October will once again see Seafood week become part of the food industry calendar. This import culinary week is one where anyone in the food or catering industry can get involved and promote the UK fisheries and the fish they bring to our plates. The event is often very hands-on and anyone in the catering industry is invited to take part. Fish is such and important part of a healthy diet and this week encourages people to explore fish and is a prime opportunity to add some fish to any menu.
There are many culinary events that take place across the UK and around the world, these are just a handful, and they may help you with some ideas for a hugely successful 2019.

Microwaves & Light Equipment Care Home Catering – Winter 2018

What features on the latest generation of microwave ovens are going to be the most important/of greatest value in the Care Home kitchen?

When looking to invest in new microwaves, Care Home Caterers should look at models with variable power, as this will allow more dense food products to be reheated/cooked at slower speeds, allowing for the conduction of heat to work through to the middle to avoid an overcooked outside and raw centre! The use of variable power works in the same way as your hob and gives you the exact control you need to create speed yet a quality cooked/reheat result. A further feature to look for is stage cooking. This allows an operator to program a series of different defrost, cook or reheat tasks, allowing a complete process to be carried out at the press of a button. For example, it is possible to defrost, then cook and keep warm ready for serve up all in one go. Most leading brand models now have this function as standard. In addition, energy efficiency is a top requirement for many users and is fast becoming a definite key feature. Machines that can produce optimum results whilst keeping energy usage low will meet the needs of many new or refurbished kitchens. There will always be a place in every kitchen for a basic microwave, but future developments are likely to focus on automation, particularly for multi-sited operations. Menu consistency is key and machines which offer easy menu programming will become more and more appealing. How should the Care Home Caterer select the right microwave?
To choose the right kind of microwave, consumers should look at their menu offering and decide what tasks the microwave oven should undertake. If the microwave is to be used mainly for simple reheating and defrosting of foods then a straight-forward commercial microwave will suffice. However, if you wish to reheat and cook food products then a combination microwave oven is well advised. Items such as pastry will become soggy if reheated in an ordinary microwave whereas using a combination microwave the crisp, golden brown and conventional finished result will be achieved in microwave time! It is very important to choose the correct microwave oven wattage. You need to select an oven with sufficient power, but just as importantly, do not over specify. If too low, frustrations can be caused by delays, and if too high, it will be difficult for the user to judge the timing of small portions. Whilst it is common for caterers to choose speed (the higher the output the faster reheat times), it is also very important to understand that for some food products too much speed will destroy smaller portions of food or the delicate and sugary types of products. Many cheaper imports are flooding into the UK and it can be tempting to go down this route, but unknowingly to many, a lot of this equipment doesn’t have any product conformity standards and the back-up of a full warranty. What are the other items of light equipment that no Care Home kitchen should be without, and what should the Care Caterer consider when investing in new items of equipment such as blenders, mixers, food processors, panini grills etc?
In addition to a microwave, many sites will need a solution for stove top cooking such as frying, poaching or boiling. Induction technology combines cooking speed with safety and energy efficiency. Caterers should assess their real needs in line with current and future menu requirements and numbers to cater for too.

What would you say to a care home caterer who is in the habit of specifying domestic light equipment?
First and foremost, microwave wattage or output is a huge differential. Domestic microwaves will typically range from 800W to 1000W, with most models on today’s market being 900W. A commercial machine will normally start from 1000W, ranging all the way up to 1900W or further. This means much faster cooking and better results! Another big difference between commercial and domestic machines is build quality. A commercial machine should use on the best, heavy duty components – designed to withstand the intense use of a commercial environment. Domestic machines are built with light, home use only in mind – and therefore use much lighter duty components. Finally, consider the warranty provided with the machine. A domestic machine is designed for use in the home, so any use outside of this will invalidate any warranty it is sold with. Commercial microwaves should come with at least 1 year on site warranty cover, with many of the leading brands providing up to 3 years on site. Always consider the warranty offered on the magnetron – which is the heart of any microwave!
