What should caterers consider before buying new equipment?
     To choose the right kind of microwave, operators should look at their menu and decide what tasks the microwave oven should undertake. If you require the microwave to be used mainly for the simple reheat and defrosting of foods then a straight Commercial microwave will suffice. However, if you wish to reheat and cook food products then a combination microwave oven is well advised. Items such as pastry will become soggy if reheated in an ordinary microwave whereas using a combination microwave the crisp, golden brown and conventional finished result will be achieved in microwave time! It is very important to choose the correct microwave oven wattage. You need to choose an oven with sufficient power, but just as importantly, do not over specify. If too low, you can be frustrated by delays, and if too high, it will be difficult to judge the timing of small portions. Whilst it is common for caterers to choose speed (the higher the output the faster reheat times), it is also very important to understand that for some food products too much speed will destroy smaller portions of food or the delicate and sugary types of products.Always choose from a commercial range of microwaves, operators shouldn’t be tempted to go down the domestic route – these units simply aren’t built for the rigours of a professional kitchen. Likewise we would also recommend that cheap imports are also avoided – the testing, safety and product back-up that are offered by the leading brand names are often not available with a cheap import.

What are the advantages of microwaves over ovens?
The most obvious advantage of a microwave is speed of cooking, they are essential for speed of service – considerably faster than conventional ovens and they also allow an operator to offer a wider choice of menu. Their versatility also provides advantages and the leading brands are developing models with new features and functionality in response to customers looking for product innovation, so they can be easily operated from a de-skilled base. Microwaves are very energy efficient too. In fact, when cooking vegetables they use three times less energy than that of a gas hob. Their footprint is also smaller than conventional ovens, great where space is at a premium.              

Does the quality of the food suffer?
It definitely shouldn’t, but be prepared for a bit of trial and error! Overcooking is one of the common problems experienced when new to microwave cooking or introducing new dishes. It is better to undercook first until you are familiar with a recipe, test it and then increase the cooking time. You should also factor in standing time and test a dish after this – a bit of trial and error will help establish the correct timing for a perfect result. You can always put it back in the oven for an extra minute – whereas overheated or overcooked food is ruined. Consider each of the foods you are cooking – every food has a different moisture, fat and sugar content and different starting temperatures – e.g. refrigerated, ambient etc. and these factors all affect cooking times and can affect the final result.

What one tip would you offer on getting the best from your microwave?
When using your microwave on a regular basis, one tip that shouldn’t be overlooked for getting the best from a microwave is regular cleaning - keep the oven’s cavity and inner door clean of food spillage / deposits at all times. This will avoid cavity burn ups and prolong the life of its heart “The Magnetron”. This measure will also help the consistency and speed of reheat/ cook times.

What types of oven are available?
There are many choices available within the commercial oven market, whether gas, electric, dual fuel or increasingly induction, the options are wide and varied and come down to personal preference as well as the menu offered, plus other considerations such as space and budget restrictions. Whatever the preference though, I would recommend that it has to be a versatile and flexible workhorse able to make light work of the most demanding and varied dishes and be able to respond to the on-going changing demands that come with any busy, professional hotel kitchen.
Microwave ovens are definitely an essential part of every commercial kitchen – essential for speed of service yet still allowing a chef to prepare and offer a wide choice of menu. Microwaves are also very energy efficient. If simple reheat and defrosting of foods is required then a microwave will suffice, but if a chef wants to reheat and cook food products then a combination microwave convection oven is well advised. The latest and most flexible combination microwave oven from Maestrowave is the Combi Chef 7. For more traditional oven cooking, the Smeg ALFA Range of bake-off ovens provides an equally flexible solution. Ideal for breakfast service, savouries, breads and morning goods including the most delicate of products, like croissants, can be cooked to perfection. Plus use of these ovens can expand way beyond that – in fact, there is relatively little that can’t be cooked!

What should caterers consider before buying new equipment?
Caterers should consider their equipment needs in line with current and future menu requirements, numbers and times/peaks in service – for example, it maybe that two smaller, versatile ovens that can adapt to changing service needs are better than investing in one large unit or that for example, one larger bake-off oven could cover a breakfast offering by itself and then bake-off products, such as baguettes, ready to be filled for the lunch service.  
Space and installation aspects are also key considerations. Consider the footprint of some ovens in comparison to their potential output and whether products can be stacked, one on top of the other. Chefs can easily switch between one or two ovens depending on demand, which will give them great flexibility and potentially added profits when operating to full capacity, off-setting initial outlays. Alternatively a secondary smaller back-up oven such as the Smeg ALFA43XUK could be installed to help cater for peaks – or a microwave added for speed. Are there any environmental considerations?
Energy efficiency is extremely important. What items of light catering equipment are essential?
It really can be a mine field to decide what equipment to choose out of the hundreds of brands and variations of equipment available. It really depends on your type of operation, the throughput and staffing levels – there’s no point in having lots of individual pieces of kit if they are going to sit on a shelf for the majority of the time!
As a starting point, we would suggest that a Combination microwave oven (such as the Maestrowave Combi Chef 7) which is extremely versatile and can perform a number of multiple tasks in one easy to use unit is one essential.    Couple this with the addition of an induction hob for further instant heat plus certain specific complementary pieces that can spread the workload such as Panini grills, slicers, rice cookers and soup kettles that can perform individual tasks with ease can all be essential depending on the type of operation and menu offered.

What are the advantages of using light catering equipment (power saving, efficiency etc) over ovens etc?
Light duty equipment is often compact and relatively inexpensive, particularly useful where caterers have limited budgets or want to try out a new menu offering before investing in expensive kit. Most light duty items are also plug and go – operating from just a 13 amp socket, meaning low running costs and good energy efficiency.

What should caterers consider before buying new equipment?
Equipment that is multi-functional and versatile is ideal and where space is at a premium, units with a small footprint can help save valuable space – as can those that can stack, one on top of the other. It may seem fundamental, but consider the footprint of some equipment in comparison to their potential output. The Combi Chef 7 has a small counter top footprint and can be stacked one on top of the other – so you can save on space yet double the output. 
   Many cheaper imports are flooding into the UK and it can be tempting to go down this route, but unknowingly to many, a lot of this equipment doesn’t have any product conformity standards and the back-up of a full warranty. So when purchasing, I would recommend operators to go for a well-known brand - guaranteed quality doesn't cost you more! 
   Regardless of size or duty, sturdy manufacture is a ‘must’ and this is what you get by choosing a well-known brand - anything else won’t perform or last. Choose a leading brand with an established reputation for good quality, durability and reliability. These brands usually build in great operational features too, which should always be considered.

Should caterers look for companies with a long history of products? Or is it worth gambling on the latest innovations?
New products are always hitting the market, and whilst some of these will stand the test of time, it is always worth considering brands with a proven track record of reliable, established products and services. Consider the availability of any spare parts or warranty call outs, along with conformity standards. Choosing a well known brand with guaranteed quality shouldn’t cost you more – and companies are always looking for ways to incorporate the latest technology and innovations – so you shouldn’t lose out!

What kind of warranties should caterers look out for?
Commercial equipment should come with a minimum of a 1 year warranty, with spare parts and service readily available. Some equipment comes with a warranty of 3 years or more! Once the product is outside of its manufacturer warranty period, consider the cost of the equipment and whether it is economical to look at an on-going maintenance contract, or if it would be more cost effective to replace the machine if any issues occurred.

What one tip would you offer someone who is investing in light catering equipment?
Look at your menu offering and ensure that the equipment chosen meets the needs of your menu now, but also importantly consider any future developments. Ensure all staff are fully trained to use the equipment to its full potential and also in any regular cleaning/maintenance to ensure it is performing at its best.

What new technologies or features are available for barbecues?
Outdoor eating is a growing area of the UK market and operators should be taking the opportunities for extra revenue that barbecues can provide seriously. Whilst portable, folding options remain popular, there is a place for more permanent outdoor kitchens that can be used over and over again throughout the Spring and Summer months. With the Crown Verity Professional Barbecue range, operators can either create their own BBQ Station by combining a barbecue with prep areas, refrigeration and even branding – or look at ready made options, such as the MBI80 which includes a 36” barbecue with side burner and storage.

What particular types of food are best cooked on barbecues? How can operators use these appliances to create and update menus for summer?

What are the main benefits to operators using barbecues?
The main advantage of using a barbecue is that it can be used to create a completely new menu, in addition to a standard food offering and is a great way to generate extra revenue during the Spring and Summer months. Are there any particular kitchen requirements for operators to be able to install and use barbecues in their restaurant?
Provided some sort of outdoor area is available, any establishment can quickly and easily set up a barbecue for use almost immediately. Charcoal and Gas options are available, with gas options using portable gas cylinders. Operators should also consider some kind of portable hand wash station and also prep/serving areas to avoid constant back & forth to the main kitchen.
